We work very hard to prevent the juice from being "denatured" or "degraded" in any way. The things to avoid are heat, exposure to air and elasped time.
The juice is never pasteurized as that would kill the vitamins and enzymes which are part of what makes this living food so powerful. To avoid production heat, we use specialized juicers. These juicers are called "masticating" juicers and they simulate chewing the vegetable fibers to break up the plant cells. This results in more fiber, enzymes, vitamins and trace minerals. Masitcating juicers are the most efficient method of expressing juice from the wheatgrass and provide the additional benefit of operating at slow speeds (RPMs) which results in less foam, less heat and more nutrition in your glass. We minimize exposure to the air and time variables through the proximity of our fields to the juicing facility, a variety of time saving processes and flash freezing. The wheatgrass is literally brought directly from the field to our juicing station. After juicing, it is immediately packaged and flash frozen. The harvest to frozen process takes place in under 30 minutes with the juice being exposed to the environment for less than 2 minutes. That is why it is so good!
