Wheatgrass juice is not a dissolved juice, rather, it is composed of tiny suspended particles. When you freeze the juice, you are allowing it to sit and therefore, the particules drop to the bottom of your container (probably an ice cube tray). I believe that this is giving you the green texture you describe.
There are only a few ways around creating this condition. First, juice in a way in which the particles are even smaller than they are now. The smaller they are, the longer it will take to settle. Second, flash freeze the juice so it is not able to separate. Third, figure out a system to turn or shake the freezing cubes so they remix.
In terms of the taste, oxidation will change it. You either need a sealed system such as an ice cube bag or a fast freezing system to improve this.
